TRAGIC LOSS

CHEF LOST A SISTER ON EASTER. SHE WAS ABOARD THE BOAT THAT WAS INVOLVED IN THE TRAGIC ACCIDENT THAT TOOK PLACE IN PALM VALLEY SUNDAY NIGHT. 13 GYPSIES WILL BE CLOSED FOR A COUPLE OF DAYS. WE ARE NOT SURE AT THIS TIME WHEN EXACTLY WE WILL BE OPEN AGAIN, BUT WE WILL POST MORE INFORMATION ON THIS SITE AS IT BECOMES AVAILABLE.

YES. YOU SHOULD ABSOLUTELY MAKE A RESERVATION. 13G IS A VERY TRADITIONAL, SMALL BISTRO. WE ONLY SEAT 14 PEOPLE INSIDE, AND 4 PEOPLE OUTSIDE. IT IS NOT UNCOMMON FOR PEOPLE TO BEGIN CALLING EARLY TUESDAY MORNING TO GET RESERVATIONS FOR FRIDAY OR SATURDAY EVENING. WE FILL UP QUICKLY.

QUESTION - WHY DONT YOU MAKE YOUR ESTABLISHMENT LARGER?

HONESTLY, BECAUSE WE DO NOT WANT TO DO SO AT THIS TIME. OUR ORIGINAL CONCEPT FOR 13G WAS TO HAVE A SMALL, EUROPEAN STYLE TAPAS HOUSE AND BISTRO THAT WOULD DO ITS BEST TO FEED THE LOCAL NEIGHBORHOOD. CHEF HAS A DIRECT HAND IN ALMOST EVERY DISH THAT LEAVES THE KITCHEN - THIS TYPE OF PERSONAL ATTENTION WOULD BECOME MORE AND MORE DIFFICULT WITH EVERY INCREASE IN SEAT NUMBER.

QUESTION - WHY DO YOU SOMETIMES RUN OUT OF MENU ITEMS OR WINES?

MENU ITEMS ARE PREPARED FRESH, BY HAND, DAILY. NO SHORTCUTS. NO PRE-PREPARED FROZEN ITEMS FROM MAJOR FOOD VENDORS. WE JUST DONT DO IT. GIVEN THE SMALL NUMBER OF TABLES WE HAVE, ONLY A CERTAIN AMOUNT OF EACH DISH IS PREPARED - TO ENSURE THAT IT IS AS FRESH AS POSSIBLE - WHICH MEANS WE DO INDEED RUN OUT OF ITEMS... ESPECIALLY ON BUSY WEEKNIGHTS.

THE SIMPLE AND TRUE ANSWER ABOUT WHY WE SOMETIMES RUN OUT OF A CERTAIN WINE IS ALSO DUE TO HOW SMALL WE ARE. A SMALL BISTRO SUCH AS OURS HAS A HARD TIME MEETING THE MINIMUM ORDER DEMANDS OF CERTAIN WINE VENDORS.... BECAUSE OF THIS WE SOMETIMES HAVE TO HOLD OFF ON ORDERING CERTAIN WINES UNTIL WE HAVE A LARGE ENOUGH ORDER TO GET WHAT WE NEED DELIVERED TO US.

QUESTION - WHAT ARE YOUR PRICE RANGES? I DONT SEE PRICES ON THE ONLINE MENU...

WE DO NOT CURRENTLY PLACE PRICES ON THE ONLINE MENU BECAUSE MANY OF OUR ITEMS FLUCTUATE WITH THE CURRENT MARKET AND THE IMPORT MARKET. CHEF IS ALSO OUR WEBMASTER, FINDING TIME TO KEEP UP WITH THE WEBSITE IS DIFFICULT FOR HIM
